The pineapple has become one of America’s favourite tropical fruits. And for a good reason! It is fantastically juicy and sweet AND so good for you! It’s filled with vitamins and minerals including Vitamin C, manganese, copper, calcium, Vitmains B1 and B6, fibre and folate.
Today’s pineapple smoothie will get you in that happy tropical mood (even if the weather out there doesn’t cooperate!).
- 4 slices of pineapple
- 1 lime
- 1 banana
- coconut shavings
- coconut milk
- Blend all ingredients well
- Add ice if desired
For the purpose of this recipe, I used a freshly grated coconut (my son had fun cracking that thing open!) You can use store bought coconut shavings too.
In addition to the benefits of pineapple, you are providing your body with the benefits of coconut, lime and banana, and these are POWERFUL!
Think vitamins (C, E, B1, B3, B5 and B6), iron, selenium, sodium, calcium, magnesium, potassium, protein, folate and fibre! Think antioxidants! Think pure goodness!
