It’s been REALLY HOT around here in the past few weeks and hey, I’m not complaining! After all, we have pretty cold winters in Canada and we anxiously await these summer months. But, when it’s this hot, hot, hot, you need to take care of your body and keep it nice and cool. Don’t want to dehydrate! And while water is always fantastic, a nice juice filled with vitamins and minerals is a lovely way of getting you cooled, feeling great AND healthy!
- 5-7 medium-sized carrots
- 1 lemon
- Small bunch mint
- Wash carrots well (no need to peel)
- Peel lemon and cut into wedges
- Push all ingredients through juicer
- Serve cold
When juicing, ensure you are alternating between your ingredients to get the most juice out of each fruit, veggie and herb!
As you may already know, I love juicing with lemons. I add them to many of my juice recipes. The little lemon is super pretty and SUPER good for you! A single lemon will provide your body with half of your daily needs of Vitamin C! It is a powerful antioxidant and anti-inflammatory. It fights disease, aids in weight loss, increases absorption of important minerals such as iron, and even assists in collagen production!
As for carrots, these little beauties are rich in vitamin A, C, K, and B8, folate, potassium, iron, copper, and manganese. They do wonders for your eyesight, boost your immune system, assist in maintaining good heart health and regulating blood sugar levels.
And of course, mint is a fantastic herb which not only allows your body to refresh and cool down, but also provides antioxidants, essential oils, potassium, calcium, iron, manganese and magnesium. It helps to control blood cholesterol and blood pressure AND helps with digestion!
