Cucumber Ginger Juice

This is the time of year when we see the beautiful farm fresh cucumbers at farmers markets everywhere.  Yum!  My boys and I have been eating A LOT of them!

So many options for cucumbers, from salads to snacks and of course to making pickles!

But, since cucumbers are 96% water,  how about juicing them?  Yes!


  • 5 medium sized cucumbers (skin on)
  • 4 coin size pieces of ginger (skin on)
  • 1 tsp honey (optional)



  • Wash cucumbers and ginger well
  • Run all ingredients through juicer
  • Add ice if desired
  • Sip on this healthy drink and be healthy!


Cucumbers are not only hydrating but also act as a deep cleanse for our bodies. They help to get rid of toxins, impurities and waste, which in turn prevents all kinds of illnesses – from digestive issues to cancer!
