This is the time of year when we see the beautiful farm fresh cucumbers at farmers markets everywhere. Yum! My boys and I have been eating A LOT of them!
So many options for cucumbers, from salads to snacks and of course to making pickles!
But, since cucumbers are 96% water, how about juicing them? Yes!
- 5 medium sized cucumbers (skin on)
- 4 coin size pieces of ginger (skin on)
- 1 tsp honey (optional)
- Wash cucumbers and ginger well
- Run all ingredients through juicer
- Add ice if desired
- Sip on this healthy drink and be healthy!
